Hello!

How is your day going so far?

It’s almost lunchtime here in the EST zone, and today I want to share with you TWO fabulous things:
one is a favorite lunch option that I make ALL THE TIME (no seriously, it’s kind of crazy how frequently I make these) and the second is a workout that will tone your abs so that you have no rolls…get it?

See how I worked that? hehe! (nerd alert!!!)

Tracy’s SKINNY ROLLS

You will need:

A few sheets of nori wrappers (you may be able to find in a normal market…depending on where you live, but for sure at whole food, or a health food or asian market)
Veggies of your choice, some of my faves are: cucumber, avocado, tomatoes, carrots
Sea salt (optional)

Place the nori roll with the smooth/shiny side down and make a small row of your fillings, then I take a little bit of water and “flick” it on the nori, you want to get it a tad wet, not too much! Then roll it up baby!!!

I usually make 3 or 4 of these bad boy and eat them for lunch, with a salad…omg delicious! Now THIS is what I call FAST FOOD! 🙂

For fillings you are only limited by your imagination. Not vegan? Try some wild salmon, or smoked salmon…or last night’s chicken…use anything you wish! Sooo good! And let me know, what’s your favorite filling? Email me at tracy@tracycampoli.com
