Happy Thursday to you dear!

Are you ready for the weekend?? Oh Yeah!!! I am so ready that today I have 2 treats for you….EXCITED?

Lately I have been super busy with all kinds of exciting things, both for my business and also lots of fun things in my social life, which is GREAT!

One exciting thing was a photo shoot with new pictures, so here is one sneak peek for you…….. I am so grateful to have TONS to choose from, so keep your eyeballs open!

This photo inspired today’s workout: THE LITTLE BLACK DRESS workout!

This is a great sequence to do when you have a hot little number to wear and want to feel sexy and confident! YES!

(I do have to admit to having a little cold this last week 🙁 so if you hear me huffing and puffing it’s not because I’m lazy, it’s just me getting over my lil cold.)

That said, I made some DELICIOUS soup the other day to spice up my life and make me feel much better fast! And it’s totally healthy and vegan, so delicious AND healthy, just like YOU! 😉

SPICY TOMATO SOUP (adapted from food52)

  • 2 TBS Coconut Oil (or extra virgin olive oil
  • 1 medium Spanish onion (peeled, halved, and sliced thinly)
  • 1 teaspoon red pepper flakes (or to taste, this is medium spicy to me…)
  • 2 28oz cans crushed tomatoes
  • 1 1/2 cup water
  • 1/4 cup loosely packed fresh basil leaves
  • Sea salt
  • Fresh ground pepper

Heat the oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes. Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. Add the basil, season with salt and pepper, remove from the heat, and let cool briefly, about 10-15 minutes. (VIP! Make sure to let it cool so your blender doesn’t explode!) Using a blender, purée the soup in batches until smooth. Taste the soup and season with additional salt and pepper as needed. Garnish with some fresh chopped basil.
